Bourbons
The mashbill must be at least 51% corn. The spirit must be distilled to no more than 160 proof, or casked at no more than 125 proof. It must be bottled at a minimum of 80 proof. Maturation must be in first-use, charred, American white oak barrels. Distillation and maturation must occur somewhere in the USA.
Canadian Whiskeys
There are no mashbill restrictions. It must be bottled at no less than 80 proof. Maturation must be for at least 3 years and may take place in new wood or used barrels. Distillation, maturation and bottling must occur in Canada.
Irish Whiskeys
The whiskey must be distilled and aged in the Republic of Ireland or in Northern Ireland. The spirit must be distilled to no more than 189.6 proof. Maturation must be for at least 3 years and may take place in new wood or used barrels.
Tennessee Whiskeys
The spirit must be distilled to no more than 160 proof. It must be bottled at no more than 125 proof. The spirit must be filtered through sugar-maple charcoal before it is matured and maturation must be in first-use, charred, American white oak barrels. It must be distilled and aged in Tennessee.
Renegade Whiskeys
The following whiskeys are unique in that they defy general categorization. They are all distilled by passionate adventures in the world of whiskey.
Rye Whiskeys
The mashbill must be at least 51% rye. The spirit must be distilled to no more than 160 proof or casked at no more than 125 proof. It must be bottled at a minimum of 80 proof. Maturation must be in first-use, charred, American white oak barrels. Distillation and maturation must occur somewhere in the USA.
Single Malt and Blended Scotches
"Single Malt" means tat all of the whiskey came from one distillery and that only 100% malted barley maks up the mash bill. "Blended" means a mix of one or more single malt whiskeys with one or more single grain whiskies from different distilleries. "Scotch" means that the whiskey must have been distilled and aged in Scotland.
